Easy Pumpkin Muffins

(And by "easy," we mean easy!)

Nothing says fall like pumpkins and the yummy pumpkin recipes of all kinds. WIth just two ingredients, this recipe for pumpkin muffins will bring the flavors of fall into the kitchen of even the busiest cooks! 

Ingredients
1 boxed spice cake mix
1 can pumpkin puree

No, your computer is not acting up. That’s really all you need!

Mix the two ingredients together, pour into paper-lined or greased muffin or mini-muffin tins (the batter will be thick!) and bake at 350 degrees for 10-15 minutes.

And an easy variation ...
This recipe is easily adapted to add a healthful punch and even more flavor. (But trust us when we say that these are great with just the two ingredients!)

Ingredients
1 boxed spice cake mix
1 can pumpkin puree
2 tablespoons flaxseed meal
½ cup applesauce (or more if you want to thin out the recipe a bit more)
2 tablespoons walnut oil
Extras – chopped walnuts; raisins; chocolate chips (you won’t ever regret adding chocolate!)  

Mix all ingredients, bake according to directions above and enjoy!
