Our Favorite Recipe

This is one of my favorite recipes.  It does not have spaghetti to help me with my health goals but I find it yummy.

Ground Turkey and Spaghetti Squash

 Ingredients

  • 1 spaghetti squash
  • 1 lb ground turkey
  • Pomi Tomato Sauce 17oz (Chunky if you like)
  • A dash of Italian seasoning
  • A pinch of basil
  • 2 tbsp of olive oil

Instructions

Preheat the oven to 400°F.  Slice the Spaghetti squash in half cutting the stem in half.  Place aluminum foil on a cookie sheet and rub 1 tbsp of olive oil on the inside halves of the squash.  Place the squash half facing down on the cookie sheet and place the cookie sheet in the oven for 45 minutes to an hour.

While the squash is baking it's time to work on the ground turkey to make the sauce. Prep a pan with 1 tbsp of olive oil and set the stove to medium heat. Cook the ground turkey until it is no longer pink in color.  This process usually takes about 10 minutes or so.  Next, add your Italian seasoning ( I do this to taste). Once it has the proper seasoning, Add in the Pomi Tomato Sauce and stir it into the ground turkey.  I like to use fresh basil leaves and will cut these up and sprinkle them in or you can use basil seasoning to taste.  Lower the stove to the lowest setting just to keep the sauce warm.

Check on the Spaghetti squash and see if it is tender.  If it is, pick it up with an oven mitt and remove the seeds.  Then scrape the strands out of the squash and you will see that it looks like spaghetti.  ( I love this stuff 😋) Portion the squash on a plate and pour your turkey meat sauce and enjoy.
