Getting our picky eaters to have vegetables is a challenge. Here is a quick recipe to sneak in some of those veggies. |
Ingredients
Place 1 cup of carrots, 1 cup of riced cauliflower in a pot with 4 cups of water and boil for 20 minutes. In another pot, add 6 cups of water and bring it to a boil. Add your macaroni and cheese and boil for 10 minutes. Once both pots are finished boiling. Strain the macaroni and cheese and return it to the empty pot. Then strain the carrots and riced cauliflower and place them into a blender. Add 1 packet of cheese from the macaroni and cheese package. Then add 1 cup of milk to help make it creamy. Blend the mixture until it is smooth enough for your picky eaters. Once you're done blending add the veggie/cheese mixture into the macaroni pot, stir, and serve. |
